Ingredients (serves 2):
1 tbsp peanut oil
25g onions, sliced into cubes
200g chicken drumlets
80g pineapple wedges
15g red peppers, diced
3 tbsp black pepper sauce
1 tbsp hoisin sauce
Garnish:
20g cashew nuts, toasted
5g coriander leaf
Procedure:
Heat wok with oil. Fry onions till fragrant. Add chicken drumlets and pineapple and fry over medium heat for 4-6 minutes. Add red peppers, black pepper and hoisin sauces and fry for another 2-3 minutes. Garnish and serve.
I modified the recipe a little. Instead of adding hoisin sauce (didn't find it in my mum's kitchen), I added a pinch of sugar coz I was afraid it might be too peppery and I skipped the garnish totally (there aren't any cashew nuts or coriander in my mum's kitchen). Oh, I also blanched the chicken drumlets before frying (thought it might help remove a little oil from the skin...healthier). But I figured I will fry the pineapple separately in future and toss them into the dish just before serving (thought it might look prettier).
PS: As I was writing this entry, I was informed of the bad news and suddenly, what has been bothering me the whole day or how good I thought the chicken tasted is not important anymore...
